    La tenuta Louis Bouillot produce vini spumanti Cremant de Bourgogne dal 1877 e oggi combina i suoi molti anni di esperienza di vinificazione con le ultime tecnologie e il know-how di vinificazione per produrre vini magnifici. Il loro stupefacente Perle de Nuit o "Pearl of the Night" è un delicato Blanc de Noir che mostra il carattere versatile della nobile uva Pinot Noir della Borgogna e l'agilità dell'uva Gamay locale.

    La casa seleziona attentamente le uve per questo vino da siti privilegiati nelle regioni Yonne, Couchois, Châtillonnais e Côte d'Or. Le uve vengono pressate il più presto possibile dopo la raccolta per creare un succo pallido che viene poi fermentato secondo il metodo tradizionale utilizzato anche per lo Champagne. Dopo la seconda fermentazione, il vino viene invecchiato per un totale di 24 mesi in bottiglia per produrre uno spumante multistrato e armonioso.

    Il Perle de Nuit è un magnifico spumante che rappresenta un'elegante alternativa allo Champagne per celebrazioni e occasioni speciali. Ideale servito come aperitivo, questo spumante è anche un accompagnamento ideale per piatti complessi come una ricca tagine, pollo servito con albicocche secche e couscous, o piatti asiatici piccanti.
