Un compleanno da ricordare con DAOU & Colomé Festeggiare il compleanno di mia madre è stato reso ancora più speciale grazie a due vini incredibili: DAOU Cabernet Sauvignon 2021 e Colomé Auténtico Malbec 2020. Il protagonista della serata è stato senza dubbio il DAOU Cabernet Sauvignon. Fin dal primo sorso, ci ha avvolti nel suo abbraccio ricco e vellutato. I profondi sapori di frutta scura, le note di cacao e il rovere perfettamente bilanciato hanno fatto sì che ogni bicchiere sembrasse una vera indulgenza. È stato audace ma elegante, un vino che ha portato senza sforzo calore e gioia alla nostra riunione. Vedere mia madre assaporare ogni sorso con un sorriso lo ha reso ancora più memorabile. Anche il Colomé Auténtico Malbec si è rivelato un'ottima espressione del Malbec d'alta quota. Era potente, con more mature, spezie e un finale morbido e persistente: un eccellente complemento alla serata. Questi vini non hanno solo arricchito il nostro pasto, ma sono diventati parte della celebrazione, elevando ogni brindisi e conversazione. Un sentito ringraziamento a DAOU e Colomé per aver reso questa occasione speciale davvero indimenticabile!

    Il Domaine Daniel-Etienne Defaix è un'azienda familiare da 4 secoli. La tenuta, una delle più antiche e rinomate di Chablis, è costituita da un vigneto storico di circa 30 ettari con cantine risalenti al XII secolo. Il Domaine beneficia dei terroir più antichi di Chablis e produce vini molto pregiati, capaci di evolvere per diversi anni in cantina.

    Le uve Chardonnay per lo Chablis Premier Cru Côte de Léchet provengono da un vigneto situato su un pendio a sud-est, su terreni marno-argillosi-calcarei di Kimmeridgian con ciottoli in superficie. Dopo la raccolta, la fermentazione avviene a temperatura controllata per un periodo di 3 mesi. Il vino finito invecchia poi per 18-24 mesi.

    Il vino presenta un colore dorato brillante e un profilo aromatico complesso e ampio. Al naso, rivela note agrumate ed erbacee e sentori minerali di gesso e miele. Al palato, è vivace e ben strutturato, fresco ed equilibrato. Ha una forte e tipica vena minerale e alcune note affumicate. Il finale è lungo e persistente. È il vino ideale per le ostriche, ma si abbina magnificamente anche a formaggi di capra, vitello e pesce in salsa bianca.
