    La tenuta COS nella Sicilia sud-orientale è stata fondata nel 1980 da tre amici, Giambattista Cilia, Cirino Strano e Giusto Occhipinti, con la visione di un approccio diverso alla vinificazione in questa parte tradizionale e conservatrice d'Italia. Una delle loro grandi innovazioni fu l'uso di "giare" o grandi anfore di terracotta che sono usate per fare i loro vini rossi e bianchi Pithos.

    Questi grandi vasi di argilla erano usati nell'antichità per fare il vino, ma col tempo il loro uso è stato abbandonato in Sicilia e in molte altre vecchie regioni vinicole. Per scoprire e reintrodurre le giare, i tre amici sono andati in Georgia dove il loro uso è ancora comune. Lì hanno imparato a far fermentare i loro vini con lieviti indigeni nelle giare e a far maturare i vini all'interno dei recipienti senza alterarne il carattere come farebbero le botti di rovere.

    Il risultato è un delizioso blend di Frappato e Nero d'Avola che esprime chiaramente il carattere aromatico puro dei due vitigni. Al naso ci sono seducenti aromi floreali e sentori di bacche rosse mature, mentre il palato offre funghi selvatici, erbe secche e sapori di terra insieme ad una brillante acidità.
