Derivanti dalle colline della Valpolicella, i vini della Valpolicella sono fatti in una varietà di stili da uve locali Corvina, Corvinone, Rondinella e Molinara. Si va dai vini rossi vivaci e facili da bere al dolcissimo Recioto.
Come si fa il Valpolicella
I vini Valpolicella standard sono fatti con uve Corvina e Rondinella, con Molinara e Corvinone spesso aggiunti al mix. Tendono ad essere abbastanza leggeri ed eleganti con note attraenti di ciliegie rosse e molta freschezza. I vini Valpolicella Ripasso sono la fase successiva e sono fermentati sulle bucce delle uve già usate per fare l'Amarone. Questo aiuta a dare al vino finito molto carattere, complessità e ricche note di frutta secca. Ci sono anche i vini dolci Valpolicella Recioto e Valpolicella Superiore, che sono fatti con uve che sono state lasciate appassire durante l'inverno.
